  • Huile d'olive (4,2 mg/100 g dans l'huile d'olive vierge extra) [1], [2], rhodiole, vins blancs (leur donne un parfum de miel et un goût légèrement amer)

Propriétés

    • Le tyrosol est une molécule "quorum-sensible" qui peut être sécrétée par des colonies de Candida albicans et affecter la croissance de toute la colonie
      • La détection du quorum (quorum sensing en anglais) est un ensemble de mécanismes régulateurs qui contrôlent l'expression de certains gènes bactériens au sein d'une même population bactérienne [3]
  • L'hydroxytyrosol de l'huile d'olive exerce des activités anti-inflammatoires, anti-plaquettaires et ati-athérogènes sur des modèles animaux et in vitro [4]
  • Anti-oxydant [5], [6], diminue les altérations induites par les LDL oxydées [7]
  • Hypolipidémiant, l’hydroxytyrosol, l'oleuropéine et son aglycone ainsi que abaissent les taux sériques de cholestérol total et de LDL, de triglycérides, ralentissent le processus de peroxydation lipidique et renforcent l'activité enzymatique antioxydante [8]
  • L'hydroxytyrosol empêche la réduction de l'activité hépatique des Δ-5 et Δ-6 désaturases, le stress oxydatif et la déplétion en acides gras polyinsaturés à longue chaîne dans différents tissus de souris nourries avec un régime riche en graisses [9]
  • L'hydroxytyrosol est l'un des antioxydants les plus puissants avec l'acide gallique
  • L'hydroxytyrosol inhibe de manière dose-dépendante la formation du leucotriène B4 (éicosaénoïde pro-inflammatoire) [10], réduit l'activité de la 5-lipoxygénase [11]
    • Son index ORAC (Oxygen Radical Absorbance Capacity) est de 40000 umol TE/g, supérieure à celui du thé vert et du Co Q10
