Famille moléculaire

  • Composés phénoliques composés de l’enchaînement (polymérisation) de noyaux phénoliques (phénol = molécule cyclique comportant 6 atomes de carbone).
    • La synthèse du noyau aromatique phénolique ne s’effectue que dans les végétaux et les micro-organismes.

Source végétale

  • Présents dans quasiment toutes les plantes médicinales, les fruits et les légumes
    • Présents dans les tissus épidermiques des végétaux, ils possèdent un rôle de défense vis-à-vis des agressions environnementales, principalement les ultraviolets

Propriétés

  • Propriétés de fixation sur les membranes biologiques
  • Protection cardiovasculaire : flavonols, anthocyanidines, proanthocyanidines, flavones, flavanones, isoflavones, flavan-3-ols, réduisent l’inflammation vasculaire et l’oxydation des LDL, inhibent l’activité de métalloprotéinases, inhibent l’enzyme de conversion de conversion de l’angiotensine, diminuent la pression artérielle et la dysfonction endothéliale [3], [4], réduction de la mortalité cardiovasculaire (polyphénols du vin rouge, anthocyanines, tanins condensés oligomères [5], [6]
  • Protection vis-à-vis du cancer et de diverses maladies chroniques [7]
  • Antioxydants par piégeage des radicaux libres [8], (polyphénols du thé vert, proanthocyanidines du grain de raisin, resvératrol, silymarine, génistéine) [9]
  • Inhibiteurs de la lipase pancréatique, potentielle action dans la prise de poids [10], [11]
  • Anti-inflammatoires
  • Propriétés antivirales, l'activité des baies en général (genres Vaccinium et Ribes) est corrélée avec leur teneur en polyphénols, qui constituent l'un des facteurs clés dans les effets antiviraux [12], [13]
  • Facteurs de protection membranaire, protection vasculaire (améliorent le fonctionnement de l’endothélium vasculaire), protection cellulaire
  • Gastroprotecteurs, anti-ulcéreux [14]
  • Réduisent la prolifération cellulaire, prévention des cancers (prévention du stress oxydant, inhibition du métabolisme de l'acide arachidonique et des réactions inflammatoires associées, inhibition de la protéine kinase C et de la prolifération cellulaire, induction de l'apoptose, inhibition de l'angiogenèse)
  • Prévention des événements cardio-vasculaires, hypolipidémiants (augmentation de la capacité antioxydante du plasma en post-prandial), préviennent l'oxydation des lipoprotéines de faible densité (LDL = Low Density Lipoproteins)
  • Inhibition de l'absorption du fer (acide chlorogénique du café ou du maté [15]), flavonoïdes monomères (tisanes, camomille matricaire (Matricaria recutita L.), verveine (Verbena officinalis L.), tilleul (Tilia cordata Mill.), menthe pouliot (Mentha pulegium L.) et menthe poivrée (Mentha x piperita L.), produits de polymérisation de polyphénols (thé noir et cacao)) [16], [17]

  • Prévention cardiovasculaire [20], [21], prévention et traitement du syndrome métabolique dans le régime méditerranéen [22]
    • Les personnes atteintes du syndrome métabolique ont des concentrations plasmatiques sous-optimales de plusieurs antioxydants et leur consommation de fruits et de légumes est significativement plus faible [23]
